Captain John and 1st Mate Nate take a Maryland family on a fishing tour aboard the "Honey Girl", landing a nicely sized Pacific Blue Marlin (A'u in Hawaiian or Kajiki in Japanese) and Mahimahi (Dolphin Fish).
Following is a pictorial of the catch, including Nate putting his expert fish cutting skills to work on the marlin.

This fishing trip was a wonderful birthday present given to the young man on the right for his birthday from his grandmother


The spear is quickly sawed off using a coursely serrated handsaw


The main fillet section is first separated just behind the gills, leaving the head on.


The knife carefully follows along the spine bone around the entire perimeter on each side of the fish.



It's then quartered with a slice going parralel at the center.


Each fillet is removed in whole quarter sections.


Customers keep up to 20% of the catch, which includes dinner using that fish for the charter fishing party.


According to Nate, because of this Marlin's size, it makes for really ono sashimi, which he proved by sampling a raw slice from this tender section.


This looks like that scene in Star Wars when Luke Skywalker used that creatures guts to keep warm. How lovely.


The remaining carcass is tossed at dockside for the many Samoan crabs and a spotted stingray to feast on.



Nate makes quick work of the Mahimahi, peeling off the skin and removing the fillet in whole sections.
